Paleo Chocolate Chunk Cookies

This is a basic Chocolate Chip/chunk cookie recipe. It is simple to make and they always turn out delicious. Not only are they gluten free, they are completely grain, soy and dairy free. There is plenty of room for modifications. Here they are:

Mix together all "wet" ingredients:

1/4 cup Almond milk

2 eggs (leave out for Vegan recipe)

1 Tbsp vanilla

1/2 cup Coconut oil (softened in warm water)

Add in "dry" ingredients while mixing:

2 cups Flour (I used 1 cup of Cashew Meal & 1 cup of Organic Coconut Flour)

1 tsp Baking Soda

1 tsp Baking Powder

1/2 tsp Sea Salt

1/4 cup Organic Coconut Palm Sugar

2 Tbsp Chia Seeds

1 large Bar Dark Chocolate chopped into chunks

Bake @ 350 for about 20 minutes on a greased cookie sheet. Keep an eye on them. When working with Coconut Flour, it is very dry and flakey. So cookies will look a bit crumbly but should hold just fine with the right amount of "moist" ingredients. Recipe makes about 2 dozen cookies. Enjoy!!!

I love them with a cup of Peppermint Tea! They are a healthier option in moderation :)
